Strawberry Chocolate Cupcakes

Ingredients

1 ¾ cup Manini’s Multi-Purpose Flour

1 cup Cocoa Powder

2 ½ Teaspoons Baking Powder

1 tsp Baking Soda

¾ cup Butter, room temperature

¾ cup Brown Sugar, packed

1 cup White Sugar

3 large Eggs

2 Egg Yolks

2 tsp Vanilla Extract

1 ¼ cup Buttermilk

10 Strawberries

Strawberry Frosting

8 oz. Cream Cheese

½ cup Butter, softened

2 tsp Vanilla Extract

2-4 cups Powdered Sugar

Instructions

Strawberry Chocolate Batter

  1. Preheat oven to 350 degrees.
  2. Line cupcake pan with cupcake liners
  3. In a large bowl, mix together the following
  • 1 ¾ cup Manini’s Multi-Purpose Flour
  • 1 cup Cocoa Powder
  • 2 ½ Teaspoons Baking Powder
  • 1 tsp Baking Soda
  1. In a stand mixer using the paddle attachment or a hand mixer, cream ¾ cup Butter with 1 cup White and ¾ cup Brown Sugar until fluffy.
  2. Beat in 3 large Eggs, one egg at a time until fully mixed
  3. Beat in 2 Egg Yolks, one yolk at a time
  4. Add 2 tsp Vanilla Extract
  5. Cut the stems off 10 Strawberries
  6. Puree the Strawberries in a blender or food processor. Set aside 1-2 Tbsp of puree for frosting.
  7. Add remaining Strawberry puree to cake batter and stir.
  8. Fill cupcake liners ¾ full with cake batter.
  9. Bake for 15-20 mins

Strawberry Frosting

  1. In kitchen mixer mix the following…
  • 8 oz. Cream Cheese
  • ½ cup Butter, softened
  • 2 tsp Vanilla Extract
  1. Mix in remaining Strawberry puree
  2. Slowly add in Powdered Sugar until you reach desired consistency and flavor.
  3. Apply frosting to cupcakes and enjoy!
