Rigatoni with Spinach and Cannellini Beans

Ingredients

1 package Manini’s Rigatoni
2 Tbsp Olive Oil
1/2 cup diced Bell Pepper
1 Tbsp minced Garlic
1/4 – 1/2 tsp Crushed Red Pepper flakes
1 cup Chicken Broth
2 cups Spinach
1 can (15 oz.) Cannellini Beans, rinsed and drained
Salt & Pepper to taste
Grated Parmesan Cheese (optional)

Instructions

  1. Cook pasta according to package directions. Drain and return to pan.
  2. Meanwhile, in large skillet, heat olive oil over medium-high heat.
  3. Add the following and cook for 2-3 minutes, stirring constantly…

– 1/2 cup diced Bell Pepper

– 1 Tbsp minced Garlic

– 1/4 – 1/2 tsp Crushed Red Pepper flakes

  1. Add 1 cup Chicken Broth and bring to boil.
  2. Add 2 cups Spinach; return to boil and cook 3-4 minutes, uncovered.
  3. Add Vegetables with remaining liquid to Rigatoni; toss to coat.
  4. Add 1 can Cannellini Beans; toss gently. Adjust seasoning with salt and pepper.
  5. Top with grated Parmesan Cheese, if desired.
