Gluten Free Microwave Chocolate Mug Cake


3 tbsp Manini’s GF Flour Blend

1 tbsp butter or coconut oil

1 tbsp + 1 tsp granulated sugar

2 tsp cocoa powder

1/4 tsp salt

1/8 tsp baking powder

1 tsp GF vanilla bean paste or extract

1 egg

2 tbsp chocolate chips + a few for the top

whipped cream or ice cream, optional


  1. Place the butter or coconut oil in a (microwave safe) mug, and microwave for 30-40 seconds to melt.
  2. Add in the rest of the ingredients except the chocolate chips, and stir to thoroughly combine.
  3. Then stir the chocolate chips into the batter, reserving a couple to sprinkle on top.
  4. Microwave for 1 minute on high. Check the cake, and cook on high for 30 seconds at a time until done (the total cook time should only be 1 1/2 to 2 minutes.)
  5. Top with ice cream or whipped cream if desired, and Dig in!
